There is a fantastic Rick Stein recipe for John Dory. Can't remember it off hand, but... Marinade the fillets in lemon juice for a couple of hours, then cook them on a smoking hot griddle.

And worse still to add to the confusion you Monk is more than likely an Angler fish

:D but the angler fish tail tastes bloody great!

and just to confuse things a little more.. true scampi is actually the crustacean Nephrops norvegicus, also known as langoustines or Dunlin Bay prawns
but they aint prawns (or monk/angler fish) at all really, they are actually a species of small lobster................
thanks

Nice bit of fish,

Try this if you like a nice clean taste to your fish, will work with either i prefer it with the monk

Poach your fish in coconut milk for 6 or 7 minutes ,add coriander and serve with rice covered with lemon/lime juice..

( I use the canned coconut milk it think its by blue dragon and its not expensive)

Its a lovely fresh clean taste..... if you like coconut and coriander.........

Enjoy it ,whatever way you have it
