Cod and whiting will be the main species to target. The end of October to The start of February will be the best time to fish for them.
Plenty of info on the site about winter fishing on the south coast. You may need an other few posts to access some of this.

For cod crab lug and mussel are the best baits, while whiting will also take these mackerel will do fine for them.
