Just wondering do you already have a kayak?
I problem that I see with them is that you will get fishing line caught up in them, if you're thinking about an anchor trolley or usin a drogue these stabilizers would not be the best idea.

Like hurler says they can be restrictive I have used them on a Hobie kayak cost about €200. I have seen them made from two crutches attached to the kayak into the side of scotty rod holders with boating floats on the other end
