Re: Bass for the table
I know what you mean. Ive had bass from a restaurant before and thought it was OK, but nothing special. To be honest i think a humble fresh mackrill fried is hard to beat.

Gurnard all the way for me!
Small Bass are really nice but I find the quality of the meat deteriorates as the fish gets bigger.
Same reason I suppose we eat baby lambs and not crusty old mountain sheep

Re: Bass for the table
used to love cod then they became scarce on the east coast then bass gradually became more available so enjoyed them but only freshly caught ones as the supermarket ones are farmed fish and are fed the same stuff mad cows were now i have been getting John Dory and think it is the best fish for taste if cooked properly
I have not fished in two years hoping to change that this year with anything ?

Re: Bass for the table
i find bass have a very slight aniseed flavour - maybe thats why the xlayer seems to kill on them. I find with trout that a fish from corrib/mask tastes far better than a derg fish which is a much earthy / muddy flavour.
ling for me, beautiful fish for battering or in currys

Re: Bass for the table
Oh yeh forgot about Monkfish! Amazing fish. I just had a nice 41cm Flounder I caught on Saturday. 4 nice fillets. Marinaded in salt, pepper and olive oil over night. Flash fried on the pan with skin still on. Very impressed! I wish there was a cooking thread on this site.

Re: Bass for the table
man, am i hungry now !
bass with spring onions chopped and bits of ginger in the cavity and steamed in foil for 10 odd mins - and to really give it a kick, finely chop some ginger and spring onions, scatter over top of cooked bass and pour over some very very hot sesame oil
