Liam, get in a bit of practice between now and Easter and give the Pike Competition in Boyle C. Roscommon a go. 2 day event, class prizes (1st Prize is 3000 euro, 2nd is 2000, loads of spot prizes etc) - sounds like a promo, but I have nothing to do with it.
You could do worse then try a bit of trolling a bulldog, or mini-bulldog, or Rapala Super Shad (the one with the Orange belly - deadly lure , but costly to lose so be careful).
Get a bit of practice in with Jacks - try spinning Tobys and copper spoons. You'll hit Jacks and the occasional double.
The articles in The Irish Angler on the handling of pike has some top notch advice for pike fishing beginners (and some advice which is very good for those of us who've been at it for years)
I don't know much about the carlow area though.
