Hi Steve,
This are the guys I bought my Kayak from http://www.unionchandlery.com/ Union Chandlery in Cork city while I was living in Sligo Town a nice round trip but these were the only guys who would import it (order it) for me. See you have to find someone who deals with Johnston Outdoors first as they are the distributor of Ocean Kayak Maybe owners not sure. But you're looking at around €850.00 for the yak, If you talk to Brain in U,C, you will get the paddle thrown in for free.
Then you will need a PFD personal floatation device one with a high back they can be purchased from any good water sports shop and you can pay as much or as little as you like on one of these. Here's an idea as to what to look out for.http://www.canoesandkayaks.co.uk/index.html?pageTitle=On_Tour_Palm&pageDesc=A_very_well_thought_out_touring_buoyancy_aid_with_front_zip_entry_Adjustable_at_the_sides_shoulders_&action=detail&maincatID=0&catID=&prodID=113&brandID=
I also wouldn't go out with out a whistle signal mirror and a pack of inshore flares in a water tight box. This will set ya back about €50.
That will get you started,

The last link will give you a good idea as to how to kit out you're yak as will some of the other sites.
Have you tried Googleing for images of "Kayak Fishing" it will open you're eye the sport is going on for years and we are far behind.
